it's summertime, it's time to head outside and get some good sunshine in our lives and take our food with us. so this video is going to show you a fewpicnic ideas, mainly with pita pockets, but hopefully if you're nearsome water you can hit the beach. i'm karlene, and i'm a graduatestudent at the university of alabama.
so take your pita pockets, and choosewhole-wheat if you can, and cut them in half, and take as many as you need and juststore them separately and zip locks. what we're going to do is take these freshingredients and mix them up and combine them. so we have chickpeas, onions, tomatoes,peppers, cucumbers and parsley.
you're going to chop everything up and storethat separately from your pita pockets. it's really important because you don'twant the pita pockets to get really soggy. so just chop up your fresh ingredientsand put them all in the bowl. now we add our chickpeas and give it a good mix. chickpeas are a great vegetarian source ofprotein, and they come with a lot of minerals and vitamins, as well as all of theother vegetables that added in there. just keep mixing until it's wellcombined in then we're going to add about 2 tablespoons balsamic vinegar, or youcould use lemon juice if you don't have it. then we're going to add another 2 tablespoonsof olive oil and mix it all up again.
we add a little salt, a little paprika,and just a dash of cayenne, or 2. and we mix that again and we put thatinto individual portions in ziploc bags. it's really important that you do the individualportions because it makes it very easy to just put it directly in the pitapocket when you're on the beach, or wherever you're having your picnic. other great picnic food is whole fruit.
beans diet,just wash it and put it in your picnicbasket, or whatever back to bringing. and that's really all you need to do. there's no preparing on-site.
you can just grab it and go.
