welcome to hungry gopher, gopher is hungryfor coleslaw with fresh straw mushrooms. try this korean spin on a classic americancoleslaw. â  the mushrooms add a bit of earthy notes fromthe forest and the sesame seeds lend a wonderful nuttyovertone. so let’s get it started!first, we’ll need 4 cups of thinly sliced red cabbage. â i’m going to usea mandolin today to make the job a bit easier and make sure we havea consistency in our cut. alternately, you could use a food processoror just a chef’s knife. â  i like the mandolin for simplicity and thelightning quick cleanup it affords.


you can find a link to this mandolin alongwith this recipe at hungrygopher.com. next, we’ll need two persian cucumbers.â cut these on the bias into â…› “ wheels, and then we’ll fan them out to juliennethem. persian cucumbers are delicious and crunchy. you can eat the whole thing,the skin and the seeds. you can also make a delicious korean cucumbersalad with them. so check out my recipe video for that.those are looking good, let’s prepare our mushrooms.i’m using 100g or (3.5oz) of “paengi beoseot” today. â some of you may know them by the japanese name, enoki,or the common name of straw mushrooms.


paengi beoseot is a common ingredient in koreandishes. these mushrooms are great antioxidants. theyare low in calories and high in b vitamins.trim the bottom off, and pull them apart by hand,to sort of separate them into individual stalks. they also have manyhealth benefits such as boosting your immune system and reducing high cholesterol.now that are the veggies are ready let’s make up the dressing.we’ll start with 2 tbsp of yellow mustard. and to that we’ll add2 tbsp mayonnaise, 1 tbsp apple cider vinegar, 2 tsp sugar,2/1 tsp freshly ground black pepper, and sea


salt to taste (about 3 pinches).for an optional kick, which you know i like, i’m going to add in â â¼ â tsp gochugaru.â  this will impart just a mild heat into ourrefreshing slaw. bring this all together, and give it a taste.remember guys, don’t only rely on the recipe, use yourpalate - trust your senses - always taste as you go. mhmm this suits mejust fine. â  let’s dress our veggies. â pour the dressingin and now let’s add our delicious roasted sesame seeds. â i’madding these at the end so that they stay crunchy longer. and usingour hands, we’ll gently


mix this all together. wow, that’s lookingbeautiful. notice how colorful this dish is. a wonderful indicatorthat it is packed with a variety of vital nutrition for our body.let’s see how we did.
